Ingredients:

2 onions, peeled and quartered
1 whole pork butt (pork shoulder roast)
Salt and freshly ground black pepper
One 11-ounce can chipotle peppers in adobo sauce
2 cans of Dr Pepper
4 packed tablespoons brown sugar

Directions:
Preheat your oven to 300 degrees F.

Place the quartered onions in the bottom of your pot. Season the pork with salt and pepper, and then put the pork on top of the onions. Place the chipotle peppers over the top, and open the Dr Pepper and pour over the whole thing. You can add brown sugar to the liquid and stir.

Cover your pot and place in the oven for at least 6 hours. Flip the roast 2 or 3 times during the cooking process. You will know it is done when it is fork-tender and a dark color.

Take the pork out of the pot and shred completely. When you are done shredding, return the meat to the pot and keep it sitting in the juice until you are ready to eat. Enjoy!
