The common ingredient in most sushi is vinegar rice. The variety is in the fillings, toppings, condiments as well as the way it is prepared. According to Wikipedia.com, “Traditional versus contemporary methods of assembly may create very different results from very similar ingredients.” Sushi has become popular in the United States. It is a variation from real sushi though. Western-style sushi has created the “California roll.” There are many rolls to choose from. You still call it sushi, unless you are in Japan where sushi is sushi, not a California roll.
