It is an early crawfish season in Texarkana. On January 8, you can actually get boiled crawfish without having to drive to Louisiana. Opening day is like getting a visit from Santa, the Easter Bunny and having your birthday all rolled into one!

This week, Hot Tails Crawfish Hut which is about 5 miles north of town on Hwy 71 will open for the 2015 season. It has been several years since we were able to get hot and spicy crawfish in this neck of the woods so early in the season. I can remember hounding the guy that used to have a hut next to Tom's Jughouse on Arkansas Blvd. and constantly calling Fat Jack's asking when will they start cooking crawfish.

I used to drive to Crawfish Palace in Haughten, La., twice a week to get my crawfish fix. That's a lot of miles and that back before I was married. Obviously, crawfish is my favorite food. I have eaten it for breakfast, lunch and dinner before and probably will again very soon.
